I love making deviled eggs and adding my own spin in the ingredients. I always get requests for it whenever I have a get together at home. This time around I added some whimsy to my little eggs. I used my instant pot to cook the eggs, but you can cook the eggs by boiling them. Here is my take on deviled eggs.
Ingredients
- 10-12 eggs
- 1/2 cup mayonnaise
- 1 tsp. Dijon mustard
- 1/2 packer of Sazon vegetable seasoning
- 1 tsp olive oil
- 1 tsp peeper
- 1/4 maple syrup
- pastry bag with piping tip
- paprika for garnish (optional)
- 4-6 black olives for garnish (optional)
- Bowl of ice water

1. When cooking the eggs in the pressure cooker, add 1 cup of water to the pot. Using the trivet, add eggs as you see above. Set time to cook for 5 minutes and let it naturally release for 5 minutes once it’s done. If you make them on the stovetop, depending on the size of the pot, fill about 2/3 up with water and boil in high heat. While boiling, gently add the eggs, reduce to medium heat and cook for about 10 minutes. Once done, remove the eggs and place in a bowl of ice water to stop the cooking.

2. Peel the eggs and gently cut eggs diagonally, remove the egg yolk and place eggs in a separate plate. Place the eggs, mayonnaise, seasoning, mustard and oil into a food processor. Pulse a few times to incorporate all ingredients until it’s smooth. Taste for salt and pepper if you think it needs it.

3. Set up the piping bag using the piping tip, fold over the top of the bag and using a silicone spatula fill bag with the egg mixture. fill each egg halves as evenly as possible.

You can now garnish the eggs with a little paprika and I used the black olives to make little spiders for the Halloween season. I cut them in half and used the other half to create the little eggs. I think they came out cute. I didn’t do all of them because I know some people may not like the olives.
