Cilantro Lemon Rice

I made this rice to pair with some air fried salmon but it can work with any dish you like. There are many recipes out there that I’ve looked at and I came up with my version gleaning from many other recipes and it’s really simple. Only takes a few ingredients. This serves about 4-6 people.

Ingredients

  • 2 Tbsp oil
  • 2 tsp garlic, crushed
  • 2 cups water
  • 1 cup rice
  • 1 tsp salt
  • 1-2 tbsp zest of lemon or lime
  • A bunch of cilantro, chopped

1. Add oil to a pan and turn on medium high heat. When it begins to heat, add rice and sauté it for about 1-3 minutes.

2. When the rice is slightly toasted, add garlic and sauté for 1 minute.

3. Add water and salt. Mix through and turn the heat onto high until the water begins to boil, around 2-3 minutes. Lower the heat to low and continue to cook rice for 20 minutes, covered.

4. After 20 minutes, remove from heat and add zest of lemon and cilantro.

The rice is ready to serve with your favorite side dish. I modified the recipe because the first time I made it, the rice was a little soggy. Second time around, it was to my liking. But you can modify depending on how you like your rice. I had mine with air fried salmon with cucumber sauce. I hope you give this a try and and thank you for stopping by. It’s greatly appreciated.
