These fritters are quite tasty. Many recipes for this calls for using salted codfish, so you need to go thru a process to remove the salt. I went the easier route and used frozen individually packaged frozen codfish that isn’t as salty as fresh. I tried making these in an air fryer but they didn’t come out as tasty as when it’s oil fried. I know some people don’t like frying in oil but if you use good and healthy oils, you should be fine. I fried them in a small amount of oil instead of deep frying. This recipe yielded about 24 fritters. You can easily crisp them up in an air fryer or toaster oven. Here’s my process:
Ingredients
- 2 packs frozen Cod (I used Snomist brand)
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp adobo
- 1 tsp minced garlic
- 2 tsp chopped cilantro
- 1 pk Sazon (with or without color)
- 1 tbs dried oregano
- oil for frying
- salt and pepper to taste
- Water, between 1/2 cup or more depending on how thick you want the batter.


1. Defrost the cod and cut up into small 1/4-1/2 chunks. you can also shred them.
2. Add enough oil to cover the bottom of a non stick pan if you don’t want to deep fry, which is what I did over a medium heat.
3. Mix all dry ingredients in a bowl with a whisk (see image above). Add at least 1 cup water and blend with whisk until the mixture is smooth and slightly runny. If you want them thicker add less water. Test for salt and pepper and add to taste. Add the fresh chopped cilantro at the end.

4. Add shredded or chopped up codfish and fold in until it’s mixed well. Try not to overmix.

5. Using an ice cream scooper or a tablespoon and carefully drop batter into hot oil. Allow to cook for about a 2-3 minutes on one side. Flip over and cook for another 2-3 minutes, or until golden and desired crispness. Place cooked fritters on paper towels to drain excess oil. Serve immediately.

You can serve this as an appetizer with a dip, if you wish, or even as a side dish with some vegetables. Even better, eat alone. It’s a meal in itself.
