Air Fried Potato Skins

If you are craving some delicious potato skins and are looking to reduce the time and energy that is needed to make them without an oven, I am posting my process which is pretty quick and easy. You’ll need an air fryer and microwave for this but it’s totally worth it. Here’s my take on this classic dish. Serves 4-6 people.

Russet potatoes

Ingredients

  • 4-6 large russet potatoes
  • plastic wrap
  • Various toppings of your choosing (optional): Bacon bits, shredded cheese, sour cream, green onions or chives
  • salt and pepper to taste

1. First, scrub clean the potatoes and dry with a paper towels. Poke potatoes with a fork in various areas. Now wrap each potato with plastic wrap and place on a microwave safe plate.

2. Doing these two at a time, place potatoes in microwave and cook for 5-6 minutes on one side. Flip and cook another 5-6 minutes. Be careful to use a towel or gloves, as potatoes can get extremely hot. Cook the rest of the potatoes and set aside to cool around 30 minutes.

3. Once cooled. Remove plastic and cut the potatoes in half. With a spoon, scoop out the inside of the potatoes into a bowl leaving at 1/4″ layer on potatoes to keep the skin stable.

4. Mash up potatoes to your desired consistency. You can add some salt, pepper, sour cream or butter to mix it up. I added a little bit of each to season the potato with some bacon bits.

5. Refill each potatoes skin with the potato mixture distributing them evenly. Place shredded cheese on top of each pototaote.

6. Spray the fryer basket with some non stick spray and place the potatoes in a single layer. Try not to overfill to allow for air flow.

7. Set the fry to 350 degrees for 5 minutes. If after 5 minutes, you can switch to broil to toast up the top for about 2 minutes. Using tongs, carefully remove each potato. They’re now ready for the garnish. I used sour cream, green onions and bacon bits.

The skins are ready to enjoy either as a side dish, as I did with some beef flank steak, or by themselves, as the they are loaded with flavor and toppings. I was really happy with the results and it only took about 40-50 minutes from start to finish, versus the time it takes doing it in the oven. I hope you give this a try and thank you for stopping by.
