There are many variations when it come to making this sauce. It’s used as spread in gyros or falafels and sometimes as a dipping sauce for veggies, pita bread chips if you like. I made a homemade air fryer baked gyros to use with this. The sauce is usually made using Greek yogurt, lemon juice and dill, but since I didn’t have any, I made it using sour cream, lime juice and cilantro because it was all I had. It came out pretty quite tasty. The key is make sure you remove all moisture from the cucumbers. Here’s what I did.
Ingredients
- 1 grated cucumber
- 1 cup Sour Cream (you can use low fat)
- 1/4 cup cilantro, chopped
- 1 Tbs. lime juice
- 1 Tbs. olive oil
- 3-4 garlic gloves, crushed
- Salt and pepper to taste
1. Peel, remove the seeds in the center (this step is optional) and grate the cucumber in a cheese grater and use paper towels or a clean kitchen towel to remove as much moisture from the cucumber.

2. Clean, dry and chop up the cilantro and put in a bowl. Juice the limes and mince the garlic in a grater or with a knife.

3. Combine all ingredients together in the bowl and gently mix them all, adding salt and pepper to taste. If it’s too thick, add a little half and half instead of water to keep it creamy. Let it rest for about 5-10 minutes in the fridge before use and you can refrigerate for up to a week.

This version came out very creamy and tasty despite changing up a few ingredients but it shows how you can enjoy your favorite meals even if they have a few different ingredients in it.
