Air Baked Meatloaf

I love meatloaf and since I made the air fried gyro meat, I wanted to try making a meatloaf in the air fryer. It cooks much quicker than in the oven. I’m sharing the recipe that my late sweet dear mama use to make but with a twist air baking it. I’m using the Instant air fryer lid attachment. It might vary depending on the type of sir fryer you have. Here it is:

Ingredients

  • 1 lb. ground beef
  • 1 lb. sausage (you can substitute with another type of ground meat if you wish.)
  • 2 heaping Tbsp. sofrito
  • 2 packets of Sazon (one with achiote, one without. I used the low sodium packet)
  • 1-2 eggs
  • 1/2 cup bread crumbs or crushed crackers
  • 2 Tbsp. Worcestershire sauce
  • 3-4 Tbsp. ketchup
  • 2 Tbsp. adobo (if you don’t have adobo, then roughly substitute with 1/2 tsp. onion, garlic, and cumin powder, 1/2 tsp. salt and pepper, 1/2 tsp. oregano, 1/4 tsp. turmeric)
  • 1/4 cup milk

1. First, let the meat and sausage out of the fridge and let it come up to room temp. Then, make the “marinade” by mixing all dry ingredients, along with wet ingredients, except the eggs and breadcrumbs. Taste for salt or anything that might be needed.

2. Next, remove casing from the sausage and break it up. Add it to the ground beef and add the marinade, egg and gently mix. Try not to overwork the meat.

3. Now, add the breadcrumbs and incorporate it well into the meat.

3. Using some nonstick spray on the pan of the air fryer, place meat and shape into a loaf.

4. Cover the loaf with some aluminum paper on top to prevent from burning the top. Close and turn on fryer for 350 degrees for 40 minutes. After the first 20 minutes, remove the aluminum paper and continue to cook until the temperature reaches 165 degrees. Let the meat rest for about 10-15 minutes before cutting into it.

4. Place meat into anther pan and skim off the excess fat from the pan and take the sauce and you can add it to the gravy, as I did.

Slice and enjoy the meatloaf with mashed potatoes, or make a sandwich out of it. It makes a great lunch the next day. I hope you give this recipe a try even if you don’t use an air fryer. This is a great meal when it’s cold outside, too. Thank you for stopping by and Buen provecho!
